This Avocado Toast is Everything

I was unaware of the avocado toast craze until only months ago my sweet niece introduced us. She politely avoided reacting like I live under a rock. 😅🤦🏻♀️
I have been hooked for a while now, and my favorite is this simple version, made with only 5 ingredients. Today's was Extra Amazing, as I used the very first slice of heirloom tomato from our spring garden. Errrmmerrrguuuursh, y'all. I think it was gone in less than 60 seconds. Make this for yourself and those you love!
Prep Time: 5 minutes
You Will Need
Your favorite bread, toasted (I use a GF Schär Deli Style Bread Seeded)
Avocado
Tomato
Cheese (for vegan version, omit or use vegan cheese)
Egg, optional (I mostly follow the Mediterranean Diet, so I only include egg 1-2x/week
Toast bread.
While bread is toasting, slice veggies.
Add cheese first so it melts on the warm toast. You could add before toasting if you prefer a more melted, browned cheese.
Spread the avocado, mushing to your desired consistency.
Add tomato. If you don't have a garden, consider your local farmer's market or store that sells local produce.
Sprinkle Everything Bagel Seasoning and go to town.
